11/23 One Pan Cajun Chicken Pasta

Happy Monday my Friends! How are you feeling about a new home cooked meal for you and your family?

This is a super easy meal that you can make in no time this evening!

What we'll need:

1 pkg. (9 oz.) refrigerated fettuccine, uncooked

1 Tbsp. olive oil

1 Tbsp. Cajun seasoning, divided

1 lb. boneless skinless chicken breasts, cut into thin strips

1 cup each red and yellow pepper strips

1 pkg. (5 oz.) baby spinach leaves

1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread

3/4 cup milk

2 green onions, sliced

1/2 cup KRAFT Shredded Parmesan Chees

Now here's how we'll prepare it:

  1. Cook pasta in boiling water in large skillet 2 min. Remove from skillet; drain.
  2. Heat oil in same skillet on medium heat. Add chicken; sprinkle with 1 tsp. Cajun seasoning. Cook 5 min. or until chicken is done, stirring frequently. Spoon into bowl; cover to keep warm.
  3. Add peppers to skillet; sprinkle with 1 tsp. of the remaining Cajun seasoning. Cook and stir 5 min. or until peppers are crisp-tender. Return chicken to skillet. Add spinach; cook and stir 2 to 3 min. or just until spinach is wilted.
  4. Add cream cheese spread, milk and remaining Cajun seasoning; cook and stir 2 to 3 min. or until cream cheese is completely melted and sauce is well blended.
  5. Add pasta; cook 3 to 5 min. or until heated through, stirring frequently. Remove from heat.
  6. Top with onions and Parmesan.

Now set your table with your favorite white tableware and sit down to enjoy a home cooked meal with your family!
